Recently, we completed a shipment of 50 tons of Sodium Stearoyl Lactylate (SSL) to a well-known Brazilian food manufacturer specializing in baking and processed cereal products.
The order followed a successful round of sample testing and application trials, which demonstrated SSL’s excellent performance in improving dough strength, bread volume, and shelf-life extension. The trial helped the customer optimize their recipe formulation and validate product performance under real processing conditions, ensuring a smooth transition to large-scale use.
Sodium Stearoyl Lactylate (SSL) is a widely used food emulsifier derived from stearic acid and lactic acid. It is particularly valued in bakery applications for its ability to strengthen the gluten network, improve dough elasticity, enhance gas retention, and increase bread volume. It also helps extend product freshness by delaying crumb firming and contributes to better overall consistency and quality. SSL emulsifier is commonly used in a variety of flour-based products, including bread, buns, cakes, and noodles.
