DESCRIPTION
In hot oils and fats, Calcium-Sodium Stearoyl Lactylate is highly soluble. It is an anionic powder or flake-shaped solid emulsifier with an HLB value of 6.7 that may dissolve in hot oils and fats and disperse in hot water. With an HLB value of 6.7, it is an anionic emulsifier. It can be used for emulsification, aging resistance, gluten fortifier and fresh-keeping in flour products such as bread, steam bread, noodle, instant noodle and dumplings.
