Glyceryl Monooleate (GMO), also called Glycerol Monooleate or Monoolein, has both hydrophilic and lipophilic characteristics, allowing it to work at the interface between different phases in a food system. By promoting more uniform distribution of fats and oils, GMO can help improve formulation consistency and processing performance.

In bakery products, GMO may support fat dispersion, batter and dough consistency, and crumb texture. In dairy and confectionery formulations, it can be considered where control of fat-water interaction and texture is important. It is also suitable for selected frozen dessert applications.

GMO has different physical and functional characteristics from GMS because it is associated with oleic acid rather than stearic acid. Therefore, replacement should be evaluated according to the complete formulation and processing conditions.

CHEMSINO provides food-grade GMO for international food manufacturers and distributors, with samples and product documentation available for evaluation.
