Polyglycerol Esters of Fatty Acids is a non-ionic surfactant. Easily soluble in oils and fats and soluble in organic solvents such as ethanol, can be dispersed in hot water. It is used as emulsifier, penetrant, stabilizer, quick-dissolving agent, antistaling agent, wetting agent, and dispersing agent in ice cream, rice and flour, baked products, sweets, dairy products, and meat.
